Gimbap

Gimbap or kimbap is a very popular snack in Korea that can also be used for lunch. The main ingredients are gim (dried purple kelp) and bab (cooked rice soured with vinegar) or, depending on the variation, with ingredients such as bulgogi (fire meat), spinach, pickled radish or omelette. You can also prepare gimbap in a wide variety of combinations (e.g. with sesame leaves, tuna, various types of cheese, fish eggs, crab meat, etc.). It is rolled and cut into bite-sized pieces.

At first glance, gimbap resembles Japanese sushi rolls, although the two don`t have much in common. In contrast to gimbap, Japanese sushi is often minimalistic, because usually only a tuna roll or a pure salmon roll is used, while gimbap can contain meat and vegetables. In addition, no raw fish is usually used. Since gimbap predates sushi, it`s likely that one evolved from the other.
Gimbap has a very high iodine content and is therefore very high in terms of health. Especially with gimchi, it is a very nutritious and healthy dish.
